When you place a beautifully marbled choice cut of Angus beef on the grill, your senses explode. The crackling of the flames while the steak sizzles on the hot metal rack awakens the meat lover in all of us.

Bratwurst

Bratwurst is another item that we love to grill in the summertime. There are many flavor variations of Bratwurst available. Some people barbecue them, others cook them as they are and eat them on a bun like a hot dog. Try the Mustard/Beer Grilled Bratwurst recipe below for something new this summer.

6 Pre-Cooked Bratwursts
? cup of packed brown sugar
? cup of beer (your choice)
1/8 tsp. of cayenne or black pepper
? cup of spicy mustard
6 soft sub buns
1 tsp. of garlic powder
? cup of softened butter
? tsp. of salt

Condiments to Consider

? Chopped onion
? Pickle relish
? Mustard
? Ketchup

1. Cut four diagonal slits ? "deep in each of the bratwurst. These slits will give them a nice appearance and let them soak up the sauce while they cook.
2. Combine the brown sugar, beer, black pepper and mustard in a saucepan. Cook them over medium heat until boiling.
3. Add the bratwurst and reduce the heat to low, cook for five minutes.
4. Remove the bratwurst from the mixture. Set the beer mixture aside, do not dispose of it.
5. Put the bratwurst on the grill and brush them generously with the mustard/beer mixture until they brown. This should take approximately five minutes.
6. Combine the garlic powder and softened butter and salt. Once combined completely, spread the mixture on the inside of each bun. Place the buns, mixture side down, on the grill until lightly toasted.
7. Place one bratwurst in each bun and drown in whatever condiments you choose.

Baby Back Ribs

Summer just would not be summer without fall off the bone barbecued baby back ribs.

2 Whole Racks of Pork Baby Back Ribs
4 quarts of water
8 oz. of barbecue sauce (your choice)

1. Place the water in a large pot on the stove; turn the burner on high to bring it to a boil.
2. Remove the baby back ribs from the plastic.
3. Turn the ribs over and try to remove the membrane on the back. The membrane is a thin piece that covers the ribs. It can be removed if you get a knife under it at either end. Once the knife is under the membrane, grab hold of it and pull it down and then off the ribs. If you have difficulty removing the membrane, not a big deal, after all it is edible.
4. Carefully cut the ribs apart.
5. Gently place the ribs in the pot of boiling water to avoid splashing and burning yourself. Bring the water to a boil once again.
6. Now, reduce the heat to simmer the ribs for one hour.
7. Remove the pot and turn off the stove.
8. Remove the thoroughly cooked ribs from the pot and place them in a bowl.
9. Cover the ribs with the barbecue sauce. Cover and refrigerate for two hours. Be sure to coat both sides of the ribs with the barbecue sauce. Also, try to turn them every half hour to coat them with the sauce.
10. Heat your grill on high (gas) and then reduce the heat to medium right before placing the ribs on the grill.
11. Put the ribs on the grill and put more barbecue sauce over each of the ribs. It is okay to use the same sauce from the bowl the ribs were fully cooked prior to placing them in the bowl.
12. Grill the ribs for 15 minutes on each side or until hot.

Hamburgers/Cheeseburgers

A grilled burger always tastes better than the fast-food burgers we eat so frequently. We can also control the seasonings in our burgers. One thing I like to do is put steak sauce in with my lean ground beef and then mix it together, make my patties and place them on the grill. Everyone loves them in that recipe they really are steak burgers. Why are they called ham-burgers anyway, there is no ham in there, right? Anyway below is a variation of the hamburger that you may want to try this summer.

1 lb of lean ground beef (will make four burgers)
3 chopped green onions (with the tops)
? a cup of sour cream
? tsp. of lemon pepper
? tsp. of Worcestershire sauce
3 tbs. of breadcrumbs
4 hamburger buns

Condiments of Your Choice

? Tomato
? Shredded lettuce
? Mustard
? Sliced onion
? Ketchup
? Mayonnaise

1. Mix the chopped green onions, sour cream Worcestershire sauce, lemon pepper seasoning and breadcrumbs.
2. Mix these ingredients with the ground beef until combined.
3. Shape prepared beef into four patties.
4. Place patties on a cookie sheet lined with wax paper.
5. Cover with foil or plastic wrap and place in the refrigerator until well chilled. This step is crucial because if you neglect to do this your burgers will fall apart. Making them in the a.m. to cook in the p.m. is recommended.
6. Grill them on medium/ high heat for about 5 minutes per side.
7. Serve on hamburger buns with condiments of choice.

Shish-ka-bobs

Shish-ka-bobs have a multitude of options. You can use pork, beef, chicken or shrimp. Place these on skewers with a variety of vegetables including onions, green peppers, tomatoes and potatoes. Pineapple goes well with chicken, consider making a sweet and sour shish-ka-bob and serve it with rice.
